“Oh no! You broke your diet! Ew what is that green stuff you’re eating?! Healthy foods are disgusting! Blah Blah Blah!” These are just some of the comments people make because they don’t know how to do their research!

From a young age my mom has always introduced me to new and different healthy foods. It is to the point where I don’t drink cows milk at all, and will choose to eat an avocado every day I can. Now this doesn’t mean I don’t splurge and eat some cheat meals because I DO. I am not on any type of “diet” it’s my lifestyle and I just eat in balance. My meals are typically 80% healthy, and 20% cheat meals. Keep scrolling to see what some of my top favorite healthy meals I enjoy whipping up!

Breakfast

Morning Detox Drink:

As soon as I wake up in the morning, I drink an apple cider vinegar detox drink on an empty stomach.

It contains
* 1 Cup Hot Water
* 2 Tablespoons Apple Cider Vinegar
* 2 Tablespoons Freshly Squeezed Lemon Juice
* 1 Tablespoon Honey
* 1 Teaspoon Cinnamon

This will help boost your metabolism, help detoxify your digestive system, and even help you shed a few pounds. Now I know what you’re thinking “Ew that sounds disgusting!” but trust me, the combination of these ingredients makes it so tasty!

 Slimquick Pure Weight loss Protein Powder:

When it comes to protein powders, I always try a new one after finishing a tub, but this one has become my all-time fav! You can actually buy it at Walmart. If I know that Im going to the gym in the morning, I will take a scoop of this before heading to the gym, it makes such a difference in my workout with fueling my muscles and getting them ready for the weights! This protein powder contains green tea which helps in giving more energy.

 

Green Smoothies:

I have quite the obsession for smoothies, especially the greens ones. You can honestly put whatever you want in them. They are just so quick and easy to make. I typically start with a base, either coconut or almond milk. Next, I add my greens of choice which tends to be spinach and kale. Then, I add a handful of frozen fruit. Now, I love frozen fruit because it has a longer shelf life, and it is much cheaper. For some added protein, and to make me feel fuller I add chia seeds, protein powder and of course, we cannot forget the avocado!

Avocado Toast:

The amount of perfection on this piece of toast is so breath takingly beautiful. When I am in a rush  I will quickly smash some avocado on whole wheat toast and sprinkle some Adobo (my fellow Puerto Ricans know what I’m talking about and be on my way. However, when I have the time, I will create a breakfast avocado toast. I will start off with a nicely toasted whole wheat piece of bread, smash the avocado on it, then layer it with scrambled eggs, crispy turkey bacon, a slice of tomatoes, a sprinkle of chia seeds, and for an added kick, a drizzle of Siracha! Oh goodness my mouth is watering just thinking about it.

 

Breakfast Tacos/ Scrambled Eggs:

My favorite meals of all time are tacos! I swear I was Mexican in my past life. I take a scrambled egg that I cook with tomatoes, green peppers, turkey bacon, spinach and kale and put it in a warmed up whole wheat tortilla. For my tortillas I like to heat them on the stove that way they get a little Smokey flavor.  To finish the tacos, I then add a slice of Avocado (of course) and some siracha for some added heat.

Now if you’re not feeling the tacos, no problem. I will just take the scrambled eggs and all of its components and just have a slice of toast with it. Honestly there are s many different options, ot makes me so happy!

 

Overnight Oats:

When I know I am going to have an early morning shift during the week, I will go ahead and set some time aside to make this the night before. I will take an oatmeal packet (you can use any kind) my favorits is the fiber and protein by Quaker and pour it into an empty mug. Then I will add chia seeds, blueberries and almond or coconut milk. When adding the milk make sure the texture is still thick and not watery.  Stir everything together and lastly add a dollop of almond butter on the top for added protein and to make you feel fuller.

Lunch & Dinner

Flat Bread Wrap:

You can add whatever your heart desires inside of this wrap! Where I live there is a store named Aldi Foods which is where I find this multi-grain with flax flatbread. I enjoy spreading some guacamole on the wrap then adding a handful of spinach, slices of tomatoes and a couple of slices of low fat honey ham. You can also toast this for an added crunch. I enjoy making these and taking them to work with me.

Salmon with Brown Rice & Quinoa:

When it comes to seafood, I am so picky, but a nice piece of Salmon does the trick for me. I will cook the salmon in a pan with a little bit of lemon juice and adobo. I will the serve it with a mixture of brown rice and quinoa, some tomato slices and half of an avocado.

 

 

 

Salad:

One of my all-time favorite salads is combining spinach, cabbage, tomato, chicken, avocado, and a little bit of cilantro. For the dressing I like to add an avocado ranch that I found at of course Walmart. This dish is so perfect, light and refreshing for any day.

 

Pasta:

I found this hearty healthy pasta at Aldi and it honestly tastes just like regular pasta. Now is the time where you will begin to see that I am a big fan of chicken as well. I will take chicken breast and cut it into cubes and cook it in sofrita tomato paste, and adobo. I will then in turn use this chicken in different dishes throughout the week. So, for the pasta I will take some chicken and toss it in the cooked pasta and add veggies and cheese.

 

Roasted Veggies:

I currently attain a culinary position at work, and I have roasted tons of veggies for different recipes. I loved the flavor of the roasted veggies so much that I started making my own at home. I’ll take some cauliflower, and asparagus on a sheet tray, drizzle some olive oil and adobo and give them a good little mix. I bake them in the oven at 425 degrees for 225 minutes, or until golden brown

 

Tacos (Again):

I told you guys that I love tacos, I not only have them for breakfast but for lunch or dinner too! I will either use ground turkey, chicken or beef and the whole wheat tortillas are the same as before. As for the toppings I will use anything from guacamole, tomatoes, refried beans, and shredded cheese.

 

Caulipower Pizza:

When I am feeling lazy and tired with no energy to cook anything at all I will pop a cauliflower crust pizza in the oven and I’m good to go. The crust taste just like regular pizza crust, but honestly, I think this crust taste way better than normal crust and plus you won’t have feel guilty.

 

Sweet Tooth

Acai Bowl:

Acai bowls are always a good idea. The combination of the acai sorbet with the sweetness of the fruit, drizzle of honey and the crunch of the granola is just so flipping good! Now with acai shops popping up everywhere it is easy to just order, pay, and go, but watch out, they start to add up quickly. Making your own acai bowl is so easy, quick and cheap. You can find the acai sorbet at Whole Foods, Trader Joes, Publix, and Walmart. As for toppings, I like to add ALL types of berries, shredded coconut, honey and granola. As an extra treat, I will sometimes drizzle a little bit of Nutella right on top.

 

There’s just something about cooking my own meals and seeing them come together that gives me so much satisfaction. And just knowing that they are healthy for me makes it all worth it.
